Protein Banana Pancakes

Banana is yummy so why not try healthy protein banana pancakes! These are a great low carb, high protein alternative to normal pancakes. Serve with fresh fruit and yoghurt for extra protein. Alternatively, pair with some crunchy peanut butter for slightly more indulgence.

Protein POW-der

I use protein powder in my banana pancakes. This helps to include more protein in my diet which is really important. Most recently I have been using the white chocolate peanut sundae vegan protein powder from the protein works – which is super sweet. You don’t have to add the protein powder by any means. I like that these add an extra flavour and make the pancakes a little bit thicker. You also get the benefit of protein of course. Instead of protein powder, you could swap this out for some rolled oats, super seed mix or just negate the powder all together.

Protein is so important for the human body, it aids cell regeneration, muscle growth and development. It can even help keep you fuller for longer so that you don’t snack on other unhealthy foods. You can read more about the benefits of protein in my article here. If you are looking to gain muscle, then this is a great breakfast idea for you. Serve with some extra thick yoghurt and / or peanut butter for some extra protein bliss.

Protein Bananananana Pancakes

As for the banana, this is a great recipe for those slightly brown (or even mushy) bananas as these are usually extra sweet and of course easier to mash. I like to pick them for this recipe when they have some brown spots as I think this is when they have the most potential. Instead of turning to your favourite banana bread recipe, why don’t you give these pancakes a try. Bananas are a great source of potassium which can help lower blood pressure and who doesn’t love healthy pancakes?!

When mashing the banana, I just use a fork and a bowl but by all means you could put this in a food processor or blender if that’s easier for you. I think using a fork is so simple (and less washing up) especially when the banana is already a little bit soft. Mash the banana as much as you can and then whisk the egg into the mixture.

Brown on the Bottom and then Flip

You should only need a small amount of oil when cooking. If you don’t have a non-stick frying pan, you may want to add a little more to ensure they don’t stick. Make sure the pancakes are browned on one side before you flip them. Otherwise, there is a risk that they might collapse. You will notice that the edges of the pancake start to turn white. This is good, it means the banana is cooking. Once this is started they are almost good to flip.

Smaller Banana Pancakes

I prefer to do mini pancakes as they are easier to flip. They are also easier to add to the pan instead of one large one. If you want to size these up to create bigger pancakes then you definitely can. Just be extra careful when flipping and make sure they are browned on the bottom first.

The best way to enjoy these is on your favourite raccoon plate along side some peanut butter. YUM.

Protein Banana Pancakes

Three ingredient low calorie, high protein, super sweet mini pancakes. Serve with your favourite toppings –mines crunchy peanut butter.

Ingredients
  

  • 2 Banana
  • 2 Egg
  • 15-20 g Protein Powder
  • 1.5 tsp Coconut Oil

Instructions
 

  • Heat the coconut oil in a non-stick frying pan on medium heat.
  • Mash the banana into a bowl and whisk in the eggs.
  • Add the protein powder and mix evenly.
  • Use a spoon to add small dollops of the mixture into the frying pan and flip when browned on the bottom.
  • Once browned on the other side, serve with toppings or sauce of your choice.
